Chicken is the favorite type of meat of many people due to its tasty and charming flavour. In Vietnam, chicken is also one of common ingredient which is used to making many delicious dishes such as fried chicken, or chicken hotpot that a lot of Vietnamese are fond of. However, Vietnamese still have one famous receipt in cooking dishes made of chicken. 1. The origin of “Ga xao sa ot”:

Chicken fried with citronella comes from the Southern part of Vietnam and it is also a specific dish of people in there. Until now, this dish has become usual dish in most family meals of Vietnamese, not only in the Souther part but also in the Northern part and the Middle Vietnam.

 2.  Ingredients and preparation:

Chicken fried with citronella, which is delicious with the aroma of lemongrass, the crispness of chicken with the deep dark spicy of pepper, surely will become an attractive dish in your family meals. To make this dish, you have to prepare ingredients as down below:

-          Chicken’s fillet.

-          Water.

-          Pepper, garlic, sugar, citronella, chilli, salt, spice, cooking oil and cucumber.

  3.  Cooking method:

Chicken fried with cintronella is not a difficult and complicated dish:

-          Slice the chicken’s fillet into small and elongate shapes.

-          Put meat inside one bowl, pour a little spoon of sugar, a little salt and spice. Crush it with fingers within 30 minutes for the spice is soaked inside the meat.

-          Mince garlic and citronella, slice chilli into small pieces. Put all of these ingredients in another bowl.

-          Heat 3 spoons of cooking oil. After that, pour another 2 spoons of minced citronella into and heat until it has the golden brown colour. Add one more spoon of chilli and all marinated chicken. Remember to cook over a high heat.

-          Cover and stew meat in about 15 minutes with small fire to ensure the spice is absorbed.

-          After 15 minutes, take meat onto plate. This dish can be eaten with cucumber.

After cooking, if the meat is soft, charming spicy flavour with theo aroma of lemongrass, especially the flavour of hot but warm pepper, your dish will be considered as success. One small attention is that you must not put too much salt in order not to be hardly eaten, or do not give too much sugar if you do not want the meat will be quickly burned.
